What you need:

MUFFIN:

2 cup AP Flour
1/2 cup Sugar
2 tsp Baking Powder
1 Egg
1/4 cup Vegetable Oil
1 cup Milk- (I added a little more)
1 tsp Vanilla
2 cups chopped Strawberries
FILLING:

  • 4 oz Cream Cheese
  • 1/2 cup Sugar
  • 1 beaten egg
  • 1 tsp Vanilla

TOPPING:
Crushed Graham Crackers and some Raw Sugar  – sprinkle on top
How to make them:

Preheat oven to 400.
Line a 12 cup muffin pan with cupcake liners or spray with non-stick spray. Combine 2 cups flour, 2 tsp baking powder and 1/2 tsp salt in a bowl and mix well. Beat together 1 cup milk, 1/4 cup oil, egg and 1/2 cup sugar in another bowl. Slice Fresh, Partially Frozen Strawberries.  You can also use 1/4 -1/2 cup of Strawberry jam. Fold in lightly.  Layer Muffin Mixer then Cream cheese Mixer then Muffin Mixer into your muffin tin.  Bake for 25 min.  Serve Room Temp or Cold.
