1.5 – 2 lb Italian sausage, hot or mild or even sweet
1 can Cannellini beans
1 Carrot (I used petite ones or you can use chopped)
1 stalk Celery
2 cloves Garlic
1 Onion (optional)
1 15-ounce can Tomatoes
6 cups Chicken stock or 1 concentrate brick and the rest water
2 tbsp of Oregeno
1 cup Ditalini Pasta or any type of Pasta


Brown off the meat with celery, garlic …then combine in a 8 quart soup pot and simmer on medium for 30-45 min.
