Pudding –

  • 1/3 cup of all purpose flour with 1/4 tsp of cornstarch
  • 2/3 cup of pure cane sugar
  • 1/4 tsp kosher salt
  • 3 Egg Yolks dropped in 2 cups of whole milk and beaten
  • 1 tsp of vanilla
  • 2 tbsp of butter – cold
  • 2-3 banana’s sliced
  • 1/2 bag of organic vanilla wafers

Directions: over med heat, mix sugar, salt, flour, egg/milk mixture, cornstarch Рstir with whisk over med heat constantly until pudding thickens, add butter and keep stirring. Let cool for 30 min, stirring with whisk, every 10 min (3 times) for smooth consistency.  Once cooled, pour over cookies and sliced bananas. Top with whipped topping and cookie crumbs!

Banana prep- slice banana’s and sprinkle fruit fresh or lemon juice or even citric acid and toss – this will keep the banana’s from turning brown
