I always like to have soup vegetables available when cooking, canning or even for small things like gravy and cornbread dressing.  Once a year or twice even, I make a quart of mix that I use whenever I need it. Never having to run to a store (if there is even one around) or running out seems stressful, so I always keep a quart on hand.  Restock as necessary.
